A Valentine Greeting from Greenhorn Nana: "Seems like love is in the air, especially with Valentine's Day just around the corner. What a perfect time to remember the first time you met your husband or boyfriend. I still remember the butterflies I felt when I think about it! I believe to have a strong marriage you have to communicate, communicate, communicate! We have to let that other person know what we are thinking, and it has to be the truth."

Greenhorn Nana’s Peanut Brittle Recipe

 

 

Just for the occasion, Greenhorn Nana features a very special Valentine's Day treat with her homemade peanut brittle recipe. Placed in a pretty box or bag with big red bow, this tasty treat is perfect to share with your Valentine!

 

Here’s what you’ll need:

  • 1 ½ cup white sugar
  • ½ cup white corn syrup
  • ¼ cup of water
  • 2 ½ cups of raw Spanish peanuts
  • 1 ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • 1 Tablespoon of butter 
  •  

What to do next:

Mix together in an iron skillet—sugar, white corn syrup and water. Bring to a boil and add 2 ½ cups of raw Spanish peanuts. Cook until the peanuts pop and the syrup turns an amber color.

 

(If you cook it too long it will taste “burned” and if you don’t cook it long enough it will be “sticky”)

Immediately add the butter, stir until the butter is melted and add 1 ½ teaspoons of baking soda, and ¼ teaspoon of salt. Stir until the baking soda is bubbling, then pour it onto a greased cookie sheet. Do not try and spread the peanuts out with spoon. Instead, shake the cookie sheet until the candy fills the cookie sheet.

Let cool, break into small pieces and enjoy!

The Old Wagon

It once was a sturdy farm wagon

Its bed was a pretty dark green

With bright red wheels, and a black wagon seat

It was the best we’d ever seen

 

We loved to go to church on Sunday

In this wagon my daddy built

We’d pile sweet smelling hay in the wagon bed

And cover it with an old quilt

 

We’d sing all the way as we traveled

On the old dirt roads through the woods

We were happy and free as could be

We made such a racket as we rode by

The neighbors would all come out to see

 

Now it sits all alone and abandoned

In a field of tall weeds you can see

Its boards all twisted and peeling

Oh, it’s such a sad sight for me

 

But I can close me eyes and remember

Just what that wagon used to be

In the days of my youth, when we were so free
